Banana walnut chocolate chip muffins
These banana walnut chocolate chip muffins are made entirely from plants, are fiber-filled & contain no added sugar. They are great for breakfast, a little snack or a sweet treat after dinner.
Ingredients:
4 mashed bananas (very ripe)
1/4 cup organic peanut butter
2 tbsp organic pure maple syrup
2 flax eggs (2 tbsp organic flaxseed + 6 tbsp water)
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp cinnamon
1 cup of almond flour
1 cup of organic oats
1/2 cup of organic walnuts
1/4 cup of dark chocolate chips
Instructions:
Preheat your oven to 365F
Make your flax egg - combine flax seeds + water & let sit until it forms a gel-like consistency
In a bowl, combine all of the dry ingredients (almond flour, oats, cinnamon, baking soda)
In a separate bowl, put the bananas in and mash by hand or with a hand mixer. Then add the wet ingredients - peanut butter, maple syrup, & vanilla.
When the flax eggs have formed a gel-like solution, add to the wet mix.
Then combine the dry and wet ingredients in one bowl.
Next, fold in the walnuts + chocolate chips, and mix to combine evenly.
Put the batter into muffin cups (I use non-toxic If You Care brand)
Bake for about 35 minuets or until fully cooked & enjoy!
