DRAGON FRUIT CHIA SEED PUDDING

This recipe is a plant-powered breakfast (or snack) loaded with lots of fiber, protein + healthy fats - my dragon fruit chia seeds pudding.

Superfood highlight: Dragon fruit (aka pitaya) is incredible for liver health, helps with healthy digestion + elimination, and is great for healthy glowing skin. 

Ingredients:

  • Ingredients:

  • 1/8 cup of organic chia seeds

  • 1/8 cup of organic hemp seeds 

  • 1 cup frozen organic dragon fruit 

  • 1/2 an organic banana 

  • 1 cup of organic cashew milk (I used Malk)

  • Top with organic kiwi + berries 

Instructions:

  • Add chia seeds + hemp seeds in a bowl with 1/2 cup of cashew milk. 

  • In a blender, blend the dragon fruit, banana & other 1/2 cup of cashew milk. 

  • Pour the blender mixture to the bowl of chia seeds + flax seeds & mix together. 

  • Pour the mixture into a glass storage container & seal. Place in your refrigerator overnight (or for a few hours) so it can form into a gel-like consistency. 

  • When you’re ready to eat it, cut up some fresh fruit to place on top.
