Summer Zucchini Pasta

This zucchini pasta is a simple + delicious summer recipes that is delish loaded with fiber!

FIBER HACK: I love using Bionaturae Pasta - it is a blend of organic rice + lentils - so it’s loaded with protein + fiber, and it’s certified organic, gluten free + glyphosate free! 

Ingredients:

  • Gluten free rigatoni  

  • Organic tomatoes 

  • Organic zucchini 

  • Organic cannellini beans

  • Organic olive oil

  • 3-4 organic garlic cloves

  • Fresh organic basil

  • Salt to taste  

Instructions:

  • Cut up the tomatoes, zucchini + garlic

  • In a sauce pan, combine tomatoes, zucchini, olive oil + chopped garlic cloves, and add some salt. Cook slowly on low heat until the tomatoes are soft and cooked down.

  • Separately, roast cannellini beans (1 jar) drizzled with olive oil + salt. Roast for about 10-15 minutes on 350F

  • Boil a pot of water and cook the pasta

  • Place the pasta in a bowl and lightly coat with olive oil so it doesn’t stick. Pour the tomatoes + zucchini on top, a few spoonfuls of cannellini beans, + sprinkle some fresh basil on top.
