Summer Salmon Tacos

Summer salmon tacos with peach salsa + cilantro tahini 

This recipe is gluten + dairy free.

Fish tacos are one of my favorite meals to eat on a hot Summer night (that I love to eat poolside!). This recipe is super fresh, vibrant + bursting with flavor. 

This recipe is gluten + dairy free.

Recipe:

Grilled lime salmon 

  • Salmon - I love Seatopia (2 pieces makes about 8 tacos)

  • 1 lime (juiced)

  • Organic onion powder 

  • Pink Himalayan salt

Place the salmon on a plate + squeeze the lime over the fish & season with salt and onion powder. Grill on the bbq until the temperature you desire. Once the salmon is fully cooked, use a fork to mash up the salmon so it is in smaller pieces to put in the tortillas. I always use my favorite Coyotas Tortillas!

Peach salsa

  • 1 organic peach

  • 1/2 cup of organic cilantro

  • 1/4 cup of red onion 

  • 1 lime (juiced)

Cut the peach + red onion into small pieces + place in a bowl. Chop the cilantro and add to the bowl a bowl. Squeeze one lime into the bowl + mix until fully combined.

Cilantro tahini: (blend all ingredients in a food processor or high speed blender)

  • 2-3 cups of organic cilantro

  • 1/3 cup of organic tahini

  • 1/3 organic olive oil 

  • 1 lemon (juiced)

  • 1 tsp of honey (I use Beekeepers Naturals)

  • 1/2 tsp organic garlic powder 

  • Pink Himalayan salt - add as needed

  • Splash of water to thin out
